Granola: Our Super Easy Recipe for a Kid Friendly Snack
Granola is the perfect snack for before practice or a game.
It has a good amount of complex carbohydrates (from the oats), healthy fats (shredded unsweetened coconut and coconut oil), and natural sweetness from maple syrup, brown sugar, and dried fruit. While I make it nut free, you could certainly add chopped pecans or almonds to the mix for extra protein, fat, and fiber.
This granola is not only super easy to make, but it keeps well for about a week and travels well – just throw in a ziploc bag for a quick snack on the way to practice, or top greek yogurt.
While this recipe takes a little longer than most of my recipes (due to the cooling time) I guarantee it’s worth it!
Super Easy Granola
Ingredients
- 4 cups rolled oats
- 1 cup shredded unsweetened coconut
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1/4 cup light brown sugar
- 1/4 cup maple syrup
- 1 tablespoon vanilla
- 1/2 cup melted coconut oil
- optional: 1/2 cup chopped nuts (peanuts, pecans, cashews, etc.)
- 1 cup dried chopped fruit (apples, raisins, blueberries, cherries, etc.)
Instructions
- Preheat oven to 300 degrees.
- Line a cookie sheet with parchment paper or a silpat liner.
- In a large mixing bowl, mix together oats, nuts (if using), coconut, cinnamon, salt and brown sugar with a fork.
- Separately, mix together maple syrup, vanilla, and melted coconut oil.
- Combine wet and dry ingredients in a large bowl using hands. Spread mixture on prepared cookie sheet, pressing down slightly with a spatula.
- Bake at 300 degrees for 40 minutes. Stir the mixture halfway through the baking time, then press down again with spatula before returning to the oven.
- Remove granola from the oven when golden brown and toasted. Allow to fully cool in pan, about 1 hour. After 1 hour, break up granola as desired and mix with dried fruit.
- Store in an airtight container, at room temperature, for about 1 week.
